00:00:00.020 --> 00:00:08.451
Hey everybody, welcome to the Private Club Radio Show Podcast, the industry's choice for news, trends, updates and conversations all in the world of private golf and country clubs.

00:00:08.451 --> 00:00:12.871
Whether you are brand new to the industry or a consummate professional, welcome.

00:00:12.871 --> 00:00:14.666
We are glad you are here.

00:00:14.666 --> 00:00:18.010
I'm your host, denny Corby Welcome.

00:00:18.010 --> 00:00:23.445
This is the show where we go over any and all topics related to private golf and country clubs In this episode.

00:00:23.606 --> 00:00:36.390
I'm stoked, I'm excited to chat and bring on an actual friend of mine, a friend of the industry, matt Campaign, who is the director of food and beverage at Trafunka Country Club in Louisiana.

00:00:36.390 --> 00:00:37.692
Real quick spell it.

00:00:37.692 --> 00:00:46.512
I love the way things are spelled down in Louisiana, but I've known Matt for many, many years.

00:00:46.512 --> 00:00:52.588
I've seen him work his way through the club industry and it's been really cool to see.

00:00:52.588 --> 00:01:06.495
Over the past years we've known each other and in our episode that's what we talk about his career in the club industry and experience in managing clubs, the food and beverage, the hospitality aspects.

00:01:06.495 --> 00:01:08.783
And what's neat is his journey.

00:01:08.783 --> 00:01:30.787
Just like many others, it comes from starting off as a busboy working with feet, hands on the ground, pounding the pavement, so to speak, and then just working his way up through the club ranks, mostly in Louisiana, went out to Reno for a little bit, did some stuff out there, but came back where he's absolutely killing it.

00:01:30.900 --> 00:01:52.295
He's been at Beauchesne the club at Ranchera Country Club of Louisiana and right now Trafunka Country Club, but I'd say really the biggest takeaways and what we talk about is the importance of really listening to members and adapting to their preferences, while also standing true to what you, the club chef, and what the club needs to do.

00:01:52.295 --> 00:01:53.805
So it is balance.

00:01:53.805 --> 00:02:02.594
So it is listening and taking all in their preferences and balancing what they want and what they need, because that is also two completely different things.

00:02:02.594 --> 00:02:04.206
This is a really cool episode.

00:02:04.206 --> 00:02:05.686
Can't wait for you all to listen.

00:02:05.686 --> 00:02:06.884
Private Club Radio listeners.

00:02:06.884 --> 00:02:13.673
Let's welcome to the show the director of food and beverage at Trafunka Country Club, matt Campagne.

00:02:13.673 --> 00:02:26.588
And, as a total side note, I know he loves cookies and cream ice cream so right before we chatted I had a delivery sent to his office from Uber Eats of some ice cream.

00:02:26.588 --> 00:02:29.847
As a bus boy, right.

00:02:30.479 --> 00:02:32.004
Bus boy, cabana boy Yep.

00:02:32.888 --> 00:02:33.810
Cabana boy.

00:02:34.501 --> 00:02:40.025
Oh, poolside server if you want to call it that, but cabana boy sounds cooler, was that over?

00:02:40.025 --> 00:02:41.627
At that was at Beauchamp.

00:02:42.068 --> 00:02:42.509
Yep, okay.

00:02:42.509 --> 00:02:52.229
Oh, okay, so they had cabana boys before it was cool yeah, before it was in and then did you go to?

00:02:52.229 --> 00:02:55.902
Do you go to school for hospitality and food and beverage and all that?

00:02:55.983 --> 00:02:56.605
I went for.

00:02:56.605 --> 00:03:03.507
So I went for business with a concentration in hospitality, but it wasn't a hospitality degree per se, gotcha.

00:03:03.507 --> 00:03:06.653
It was basically like two classes of hospitality thrown in there.

00:03:06.653 --> 00:03:11.187
So they say concentration, yeah, but it was a general management degree.

00:03:12.661 --> 00:03:15.449
When did you know you were going to kind of stick to clubs?

00:03:19.620 --> 00:03:24.552
Really, it was probably end of college.

00:03:24.552 --> 00:03:33.501
So when I started at Bochent, I was at the tail end of my freshman year and then ended up graduating, didn't?

00:03:33.540 --> 00:03:34.485
know what I wanted to do.

00:03:35.367 --> 00:03:37.026
Really, I knew I loved where I was at.

00:03:37.026 --> 00:03:44.826
But also if there wasn't a management position open or anything like that or any kind of advancement opportunities, I didn't want to be a server banquet worker captain per se for the rest of my life.

00:03:44.826 --> 00:03:46.740
I didn't want to be a server banquet worker captain per se for the rest of my life.

00:03:46.740 --> 00:03:49.026
I have this brand-new degree.

00:03:49.026 --> 00:03:49.609
It's all cool.

00:03:49.609 --> 00:03:50.764
I want to do something with it.

00:03:51.879 --> 00:04:01.807
And then, three weeks after I graduated, my current manager, our assistant club manager over at Boshen, happened to put her notice in.

00:04:01.807 --> 00:04:07.286
She was leaving, she was going to start a family, getting married and all that good stuff.

00:04:07.286 --> 00:04:10.550
She was going to do the stay-at-home mom thing.

00:04:10.550 --> 00:04:18.502
They approached me and I was like, well, you know, I already know I love this place and I love what I do and I love the people.

00:04:18.502 --> 00:04:20.910
I was like maybe I can make a career out of this.

00:04:20.910 --> 00:04:28.605
I dove deeper into it and talked with our gm, then ken johnson, and uh, kind of just worked out from there.

00:04:28.605 --> 00:04:30.961
I was like, oh man, I'm gonna try it out, you know.

00:04:30.961 --> 00:04:44.163
Yeah, I think, set my claws in and see what I can do with this, you know um, you've mainly stayed in the new orleans area, except for your little stint out in uh my small tiny stint.

00:04:44.225 --> 00:04:45.829
Yeah right, I was.

00:04:45.829 --> 00:04:47.966
I was at boshan for 12 years total.

00:04:47.966 --> 00:04:52.437
Um five years was that span of college.

00:04:52.437 --> 00:04:56.771
I was on the five-year plan, five and a half year plan um right.

00:04:56.771 --> 00:04:59.059
But um, that was lucky five and a half.

00:04:59.059 --> 00:04:59.942
It should have been six.

00:04:59.942 --> 00:05:04.052
But I went to my guidance counselor I was like, hey, what's the fastest track out of here?

00:05:04.052 --> 00:05:05.687
You know, I'm like, I'm done with college.

00:05:05.687 --> 00:05:07.968
I'm at the end of my Pell grants.

00:05:07.968 --> 00:05:09.211
They're not giving me more loans.

00:05:09.521 --> 00:05:10.283
I got to get out of here.

00:05:10.303 --> 00:05:10.504
You know.

00:05:10.504 --> 00:05:18.353
She was like well, if you take 18 hours this semester and then nine hours in the summer and 18 hours in the fall, you graduate in December.

00:05:18.353 --> 00:05:25.711
I was like, deal, we're doing so, we're doing so during that time.

00:05:25.711 --> 00:05:35.519
That's when I was server, bus boy, cabana boy, to start kind of working my way through that.

00:05:35.519 --> 00:05:44.418
Then that was another seven years as assistant club manager at Bo Shen and really that was the longest tenure.

00:05:44.418 --> 00:05:49.709
Then I decided it was time to kind of with my career, it's time to build.

00:05:49.728 --> 00:05:56.305
That's when Don Beaver was at Beauchesne I knew he was going to be there for a while, the seasoned vet he is.

00:05:56.305 --> 00:06:05.245
I was like I've got to try and test the waters, maybe it's time for me to move somewhere and try it out.

00:06:05.245 --> 00:06:06.985
Got to see the great country.

00:06:06.985 --> 00:06:13.699
My sister moved to the Bay Area at the time so I was like, yeah, maybe I can get closer to some family, my closest sibling.

00:06:13.699 --> 00:06:21.074
And so I found that job in Reno at the Club at Ranchera and it was a great experience, great team there.

00:06:21.074 --> 00:06:30.189
That was just the 14 months I was there Kind of turned into a shorter sentence.

00:06:30.189 --> 00:06:33.810
I wanted to, but ended up back in Louisiana back at home.

00:06:34.800 --> 00:06:38.370
Family and things and other things take, take precedent sometimes.

00:06:38.490 --> 00:06:40.666
That's it, you know, I think I told you.

00:06:41.581 --> 00:06:50.074
No, I was going to say was there was there a big difference or culture difference in terms of people and employment between Louisiana and Reno Nevada?

00:06:51.661 --> 00:07:01.321
You know, people-wise, believe it or not, that little small pocket of the West Coast area they're fairly conservative, kind of like Louisiana is that little pocket.

00:07:01.321 --> 00:07:06.589
Once you cross the border from California over the mountain range, right there the people change.

00:07:06.589 --> 00:07:09.975
They're more similar values and thought process.

00:07:09.975 --> 00:07:12.701
Um, that's the nevada people.

00:07:12.701 --> 00:07:22.735
Now you got the folks that are from california and the bay area and yeah, they uh have the california thought a way of life, you know, and uh, it's, it's different.

00:07:22.735 --> 00:07:30.610
But you can, you can adapt, you know, you, you can read people and know your audience and know who you're talking with and who you're working with.

00:07:30.610 --> 00:07:34.632
And I'll say the biggest difference would be their core values of.

00:07:35.355 --> 00:07:42.610
For me, in food and beverage, they value over there more of ingredient-based farm to table.

00:07:42.610 --> 00:07:44.853
Where did this food come from?

00:07:44.853 --> 00:07:45.875
Where is it sourced from?

00:07:45.875 --> 00:07:47.682
Here it's just like is this food really good?

00:07:47.682 --> 00:07:53.411
No, what's, how is it?

00:07:53.411 --> 00:07:59.288
Or, and it's more of, what was your preparation method here other than where did the ingredients come from?

00:07:59.288 --> 00:08:04.088
It's so it's a similar but different thought process.

00:08:04.088 --> 00:08:06.673
You know, know, from a beverage perspective.

00:08:06.673 --> 00:08:08.406
Now, politics, you can get into that if you want to.

00:08:09.762 --> 00:08:10.343
And Ranchera.

00:08:10.343 --> 00:08:11.307
There was no golf either.

00:08:11.326 --> 00:08:15.848
Correct it was more of a city club, but it was a community amenity.

00:08:15.848 --> 00:08:19.567
Yeah, and it was a fairly new club.

00:08:19.567 --> 00:08:21.685
When I got there it was a year or two old.

00:08:21.685 --> 00:08:23.084
They had just converted it.

00:08:23.084 --> 00:08:30.807
It was actually the Harrah's Mansion, john and Bill Harrah's Casino.

00:08:30.807 --> 00:08:38.807
It was purchased and converted to a club and community.

00:08:38.807 --> 00:08:44.379
It was beautiful, great club, great staff, great members, growing membership.

00:08:45.140 --> 00:08:50.153
I'm going to be having Whitney Yates on soon, okay, cool, good, yeah, who's there?

00:08:50.153 --> 00:08:51.826
Because they're doing some cool stuff.

00:08:51.826 --> 00:09:01.370
She was telling me, just like some of the programming, and I totally forgot they didn't even have golf and they're just like a city club and they're killing it with like the most random events.

00:09:02.542 --> 00:09:04.509
Yeah, I keep following their Instagrams.

00:09:04.509 --> 00:09:13.654
Yeah, it looks like they've teamed up with the Pioneer Center in downtown Reno and they have all this entertainment lined up and it looks awesome.

00:09:14.080 --> 00:09:17.691
Yeah, they're doing a lot of cool stuff, which is great to hear, right?

00:09:17.691 --> 00:09:22.652
So what was it like coming back to Louisiana?

00:09:24.900 --> 00:09:33.115
I was back home, ended up taking a clubhouse manager role over at Country Club Louisiana in Baton Rouge.

00:09:33.115 --> 00:09:41.885
It was good liaison back home Hour away from home, but still home, closer to friends and family.

00:09:41.885 --> 00:09:45.706
I enjoyed my time there.

00:09:45.706 --> 00:10:03.068
It wasn't quite the best fit for me, I don't think, and I realized that about a year in I met Katie over here at Chifuncta, our GM, katie Santangelo, and things kind of worked out to literally get me home, get me back.

00:10:04.461 --> 00:10:05.604
Can you go into that a little bit more?

00:10:05.604 --> 00:10:09.985
What did you mean by it wasn't a good fit you?

00:10:10.004 --> 00:10:13.033
know every club's different um way it's built.

00:10:13.033 --> 00:10:16.341
There was in a management transition phase.

00:10:16.341 --> 00:10:35.962
It was more of I don't want to say it wasn't quite what I was expecting, but it was more of not the position I wanted to be in at the time um severely transition um board management, um financials, all the kind of top to bottom transition.

00:10:35.962 --> 00:10:39.912
It's not really the position I wanted to be in at the time.

00:10:39.912 --> 00:10:43.547
I was still growing my career and learning as I go, you know yeah.

00:10:44.589 --> 00:10:44.970
Is there?

00:10:44.970 --> 00:10:46.011
Is there?

00:10:46.011 --> 00:10:46.933
What's it like?

00:10:46.933 --> 00:10:58.167
I don't know what the wording I'm trying to use for it, but you've had different titles that seem like it goes up in I don't want to say up in value, but up the ladder or down.

00:10:58.167 --> 00:10:59.866
It looks like it back and forth.

00:11:00.419 --> 00:11:02.206
They're all basically the same with different names.

00:11:02.206 --> 00:11:06.028
How does that make you feel?

00:11:06.400 --> 00:11:08.822
Some people that's a huge deal, other people they don't care.

00:11:08.822 --> 00:11:25.508
So I always just like to ask, like you know, what was that like, cause sometimes it could be a ego hit to you know, go to a new place and all of a sudden it might just seem like a different title and stuff.

00:11:25.508 --> 00:11:26.087
So like, how did you?

00:11:26.207 --> 00:11:27.129
you know what, thank you.

00:11:27.129 --> 00:11:39.518
In the club business there really is a difference between a food and beverage manager and a food and beverage director, and there's a difference between a club manager and a general manager and there's a difference between club house manager and a club manager.

00:11:39.518 --> 00:11:50.019
It's such small nuances in title that could make a big difference for certain people.

00:11:50.019 --> 00:12:01.504
For me, for instance, I went from a consistent club manager at Bo Shen, which was basically a food and beverage director role, just with a different name, and Reno at the Club of Ranchero was food and beverage manager.

00:12:01.504 --> 00:12:09.346
So it was more of a dining room manager role and I knew that taking it when I went out there and I was happy with it.

00:12:09.346 --> 00:12:12.589
It gave me a chance to explore and see what I liked.

00:12:12.589 --> 00:12:14.080
It was a different setting of club.

00:12:14.080 --> 00:12:16.167
It was a different type of club.

00:12:16.167 --> 00:12:16.970
It wasn't a country club.

00:12:16.970 --> 00:12:20.879
So I tried it out and you know it worked.

00:12:20.879 --> 00:12:26.220
Then a clubhouse manager role at Country Club Louisiana.

00:12:26.220 --> 00:12:32.820
It was kind of split between clubhouse manager and assistant general manager.

00:12:32.820 --> 00:12:48.370
As far as food and beverage director, such a large volume club between banquet and member dining, it was over $4 million food and beverage just at the one club, so it was a pretty big operation, so we split duties.

00:12:48.370 --> 00:12:51.809
He took on more of maintenance and banquets.

00:12:51.809 --> 00:12:59.932
I focus more on member dining, um, so almost like having co food and beverage directors per se.

00:13:00.801 --> 00:13:08.381
Um, and now I am at Chafunk, the country club, I am the food and beverage director and, um, we've, we've turned things around here a lot.

00:13:08.381 --> 00:13:11.888
It was a lot, it was fun.

00:13:11.888 --> 00:13:16.453
I had a blank canvas coming here pretty much, and it's been a fun over a year.

00:13:16.453 --> 00:13:25.042
The chef had just left and he was chef slash food and beverage director.

00:13:25.042 --> 00:13:27.644
Oh boy, well, yeah, that's a whole other topic.

00:13:27.644 --> 00:13:29.345
However, you want to run it.

00:13:29.345 --> 00:13:39.730
But I came here and the member satisfaction was low for food and beverage and first line of duty.

00:13:39.730 --> 00:13:41.230
I didn't even start at the club yet.

00:13:41.230 --> 00:13:54.878
I was still in my moving phase and was tasked with hiring an executive chef, obviously, because no food and beverage director or a chef or a manager or any kind of food and beverage anything.

00:13:54.878 --> 00:14:01.775
Okay, and I lucked up.

00:14:01.775 --> 00:14:03.676
I would say I lucked up.

00:14:03.940 --> 00:14:05.802
Lucked up Was that.

00:14:05.802 --> 00:14:06.904
Lucked up.

00:14:07.826 --> 00:14:10.831
Lucked up with an executive chef application that came in.

00:14:10.831 --> 00:14:17.902
You know, it was actually an old buddy from high school.

00:14:17.902 --> 00:14:37.029
He was a chef locally here in town at a really well-regarded restaurant in town and his application came across and I was like I hadn't talked to him since high school, since we and I was like this is, but I knew all about him.

00:14:37.029 --> 00:14:47.520
I was like this is a no-brainer, I'm holding his resume, this is no-brainer, this is my guy, you know, um, and then brought him in and we both pretty much started just about the same time, within weeks of each other.

00:14:47.520 --> 00:14:51.130
Um, that's our executive chef k Kyle Benefiel, here at the club.

00:14:52.981 --> 00:14:55.552
And he's done fantastic.

00:14:55.692 --> 00:14:57.700
Members are thrilled they are.

00:14:57.700 --> 00:14:59.524
Yeah, I think we've done a.

00:14:59.524 --> 00:15:01.990
We're almost to the 180 phase.

00:15:01.990 --> 00:15:08.423
We're still building, we're both shortly over a year in, but we've already.

00:15:08.423 --> 00:15:09.889
We've grown our member dining.

00:15:09.889 --> 00:15:12.168
If you look at revenues, we've grown that way.

00:15:12.168 --> 00:15:15.190
If you look at satisfaction with surveys, we've grown that way.

00:15:15.190 --> 00:15:21.993
Now it's we're to the point of finally getting some complaints in.

00:15:21.993 --> 00:15:26.090
At first, when we first got here, it's like, oh, the members have given up.

00:15:26.090 --> 00:15:27.740
We gave up, you know.

00:15:27.740 --> 00:15:29.864
It's like there's nothing to complain about, because what's?

00:15:29.864 --> 00:15:31.967
There's nobody to complain to.

00:15:31.967 --> 00:15:40.772
Um, so now it's we hit a year and we're getting complaints and the and chef is, he's like man, they're complaining about these.

00:15:40.772 --> 00:15:46.078
I'm like that's good, that's a good thing, man, because we went forever without hearing anything.

00:15:46.078 --> 00:15:47.302
I was like we need some feedback.

00:15:47.302 --> 00:15:49.467
You know, now they're, they're, they're engaged now.

00:15:49.467 --> 00:15:57.207
Now there's if there's something to complain about, whereas we, we've caught their attention and they're coming, you know.

00:15:59.442 --> 00:16:03.668
So it's going to be a fun journey over the next, however long this goes.

00:16:03.668 --> 00:16:08.792
So, when you were coming into this blank slate, what was your first?

00:16:08.792 --> 00:16:11.227
Well, obviously you got like a chef.

00:16:11.227 --> 00:16:19.130
You know, but like you know besides, that, like what's your first order of business, Like you like, okay, so you're, you're, you're there, you have chef like like how do you build it?

00:16:19.130 --> 00:16:20.013
Where do you start from?

00:16:20.013 --> 00:16:20.581
Like, what do you?

00:16:20.581 --> 00:16:21.807
What do you do?

00:16:22.419 --> 00:16:23.282
Right, this one.

00:16:23.282 --> 00:16:26.427
Um, first thing I did was obviously evaluate the current staff.

00:16:26.427 --> 00:16:33.044
We had management aside because food and beverage didn't really have any leadership or direction.

00:16:33.044 --> 00:16:46.383
But I found out we actually have a had a fantastic staff, and 90% of the staff that was here when we both started are still currently here.

00:16:46.383 --> 00:16:50.091
Yeah, they're all fantastic people.

00:16:50.091 --> 00:16:50.914
They're hard workers.

00:16:50.914 --> 00:16:56.149
They just needed the guidance and the direction and management staff too.

00:16:56.149 --> 00:16:56.871
It's a whole thing.

00:16:56.871 --> 00:16:58.576
Our GM is fantastic.

00:16:58.576 --> 00:17:01.495
Our membership director is fantastic.

00:17:01.495 --> 00:17:04.432
Our office administrator is fantastic.

00:17:04.432 --> 00:17:05.916
Golf pro it's across the board.

00:17:06.005 --> 00:17:07.771
Just that food and beverage aspect was missing.

00:17:07.771 --> 00:17:19.070
I think Chef Kyle and myself coming in, we get really kind of keen in and build it how we wanted to and started with staff.

00:17:19.070 --> 00:17:23.944
Second was listening to members getting a little group together.

00:17:23.944 --> 00:17:33.212
We had a couple of meet and greets in the bar and little cocktail hours, come talk with Chef Kyle and Matt in the bar and we really just listened to what they wanted.

00:17:33.212 --> 00:17:39.550
It's uh, they had to say it's a simple game, but it's pretty, pretty simple and you break it down to us.

00:17:39.550 --> 00:17:40.252
What do they want?

00:17:40.252 --> 00:17:40.814
Let's give it to them.

00:17:40.814 --> 00:17:43.057
You know, if we can do it, they want it.

00:17:43.057 --> 00:17:53.787
Why can't we give it to them and if we possibly can.

00:17:53.787 --> 00:17:54.269
So a lot of listening.

00:17:54.288 --> 00:17:55.512
And the equipment, the kitchen was great.

00:17:55.512 --> 00:18:09.413
So we really we had all the tools we needed, just had to put it all in action throughout the plan New menus, new concepts, a lot of member events, more of throw on the dart at the dartboard, blindfolded.

00:18:09.413 --> 00:18:14.650
You know, if it hits the bullseye, you know that's great, if you miss, oh well, we won't throw it in that direction again.

00:18:14.650 --> 00:18:29.335
You know it's um trial by fire and let's see what works, let's see what sticks, get the feedback back and then go from there what's some of the feedback you're getting now with the, with like the food and stuff that you know is.

00:18:29.355 --> 00:18:31.868
Is it stuff that you're seeing like people like what, what?

00:18:31.868 --> 00:18:32.390
What's?

00:18:32.390 --> 00:18:34.614
What's been that feedback that you're finally getting now?

00:18:35.375 --> 00:18:35.556
Right.

00:18:35.556 --> 00:18:37.358
Um, now we're using.

00:18:37.358 --> 00:18:39.792
So we started with the food wise.

00:18:39.792 --> 00:18:43.825
We started with let's get, like I said earlier, let's get the food good.

00:18:43.825 --> 00:18:47.148
Let's just get good, great food tasting good.

00:18:47.148 --> 00:18:51.554
Um, let's get our the the preparation methods down.

00:18:51.554 --> 00:18:53.135
Let's get our um.

00:18:53.135 --> 00:18:57.039
Let's get our prep boards done and get those filled out.

00:18:57.039 --> 00:18:58.021
Let's execute.

00:18:58.865 --> 00:19:00.313
Now we're finally getting to the point.

00:19:00.313 --> 00:19:03.105
Now we're going to keen in on the quality of ingredients.

00:19:03.105 --> 00:19:04.871
We're getting the more prime beef in.

00:19:04.871 --> 00:19:06.255
We're getting the Berkshire porks in.

00:19:06.255 --> 00:19:11.257
We're getting your finer cuts of meat to elevate the already good food.

00:19:11.257 --> 00:19:13.532
Now we're going to make it over-the-top great food.

00:19:13.532 --> 00:19:15.907
Basically the same style.

00:19:15.907 --> 00:19:22.336
Just you can tell the difference in the cut of meat and the grade of protein, you know.

00:19:22.336 --> 00:19:25.410
And the ingredients in your salads and how fresh they are.

00:19:25.410 --> 00:19:26.294
Where are they coming from?

00:19:26.294 --> 00:19:28.753
Now we're talking more of food's good.

00:19:28.753 --> 00:19:35.451
Now we can internally talk where we're going to get these ingredients from and then we're going to get these ingredients from and then we're going to build on that.

00:19:35.772 --> 00:19:44.567
The feedback from the membership obviously it's been mostly really good.

00:19:44.567 --> 00:19:46.513
They give us good pointers because we just came out with a new menu and a lot of it.

00:19:46.513 --> 00:19:48.098
We went a little bit lighter for summertime.

00:19:48.098 --> 00:19:57.435
But I think we missed the mark maybe on a couple of the healthier side things Super, light, super, which is great feedback, good.

00:19:57.435 --> 00:20:02.592
So now we can incorporate our weekly specials, we can incorporate our lighter dishes.

00:20:02.592 --> 00:20:04.436
See which one of those are working.

00:20:04.436 --> 00:20:05.907
Maybe we can link up.

00:20:05.907 --> 00:20:10.153
We have a local hospital over here Ochsner does a Eat Fit North Shore.

00:20:10.153 --> 00:20:13.734
So you have to follow pretty strict guidelines.

00:20:13.734 --> 00:20:16.666
So if you link up with them, you submit your recipes to them.

00:20:16.666 --> 00:20:24.431
Once they approve them you can put their logo on your menu and then people can recognize that this is an extremely healthy menu item.

00:20:26.497 --> 00:20:33.469
Right, a way of working with the community, and just I don't know, that's a great yeah, that For sure.

00:20:33.469 --> 00:20:35.315
That's a great yeah, that's cool, that's a great idea.

00:20:36.066 --> 00:20:42.875
I first learned of that at Bo Shen from Chef Jose Bourgeois over there and he linked up with EatFit and it was a good partnership.

00:20:42.875 --> 00:20:52.851
Yeah, it's trying to get the recipes down because I think it's like a 600 calorie max for an entree and a certain amount of fat content.

00:20:52.851 --> 00:20:57.159
So in Louisiana 600 calorie max for an entree and certain amount of fat content.

00:20:57.159 --> 00:20:58.863
So it's a in louisiana, 600 calories for an entree is uh two bites.

00:20:58.883 --> 00:21:06.738
You know all your sauces, gravy right at two phases oh, yeah, um give me the chicken, that's it.

00:21:06.778 --> 00:21:10.330
Give me the um that's.

00:21:10.330 --> 00:21:12.955
That's the type of things we're exploring now from our member feedback.

00:21:13.497 --> 00:21:13.837
That's cool.

00:21:13.837 --> 00:21:18.472
Yeah, have some of your ice cream.

00:21:18.472 --> 00:21:20.738
It should be getting like a really nice scoop.

00:21:20.738 --> 00:21:27.682
You guys do a decent amount of weddings and outside events, yeah yeah.

00:21:28.205 --> 00:21:29.873
Weddings not so much.

00:21:29.873 --> 00:21:33.973
We average about 12 a year, so one a month on average.

00:21:33.973 --> 00:21:41.535
Private events we aim to have at least one a week, so we're really not doing a crazy amount.

00:21:41.535 --> 00:21:47.295
It's about 33% compared to 66%.

00:21:47.295 --> 00:21:52.778
Remember 1966 and private events 33 over here.

00:21:52.778 --> 00:21:58.692
Remember 1966 and Private Events 33 over here.

00:21:58.692 --> 00:21:59.553
We hoped to get more.

00:21:59.553 --> 00:22:06.060
There wasn't much when I first got here, but brought in some events and some new people.

00:22:06.060 --> 00:22:16.438
We did have a fantastic banquet coordinator when I first started, but she had an opportunity to leave to really pursue her passion career, which was hair and makeup.

00:22:16.438 --> 00:22:26.214
Ever since then, I've pretty much taken over the role of banquet coordinator until we exceed that level of business that we need to bring somebody.

00:22:26.656 --> 00:22:31.545
It's going to be a lot of work handling a lot of moving parts in a short amount of time.

00:22:32.305 --> 00:22:34.935
Right, the banquets are time.

00:22:34.935 --> 00:22:37.173
Well, yeah, right, the banquets are fun.

00:22:37.173 --> 00:22:38.421
For me, to be honest, really it's fun.

00:22:38.421 --> 00:22:41.287
Yeah, they're fun.

00:22:41.287 --> 00:22:47.595
It's fun seeing the end product in the face that they make when they're happy Like a bride and groom.

00:22:47.595 --> 00:22:57.381
If you've met with them the first time they came, you talk to the bride on the phone, it's first contact and you're with them the first time they came, you talk to the bride on the phone, you know it's first contact and you, you've, you're with them the entire way through.

00:22:57.381 --> 00:23:01.692
And then you see them on their, on their uh departure out the front door.

00:23:01.692 --> 00:23:02.174
You know it's.

00:23:02.174 --> 00:23:04.587
It's cool seeing the full, full process work out.

00:23:04.587 --> 00:23:05.108
You know it's.

00:23:05.108 --> 00:23:11.508
Um, it makes me feel really good when, when I see the, the end, the end game there.

00:23:11.508 --> 00:23:23.393
You know and I well, we created this together I have a certain ownership it's a minority ownership of the whole wedding, but it's a small portion of it that I know.

00:23:23.393 --> 00:23:29.171
I helped out big time and helped make their day special and they're going to remember that for the rest of their lives.

00:23:29.171 --> 00:23:31.297
That's not just weddings, it's every event.

00:23:31.297 --> 00:23:34.810
We have a birthday brunch this weekend, it's the same thing.

00:23:36.675 --> 00:23:40.115
The planning start to finish and going through all the trials.

00:23:40.115 --> 00:23:47.258
Chef knows more than me that I say yes to everything and then I get to my office I'm like shoot, why did I say yes to that?

00:23:47.258 --> 00:23:49.711
How are we going to figure this out now?

00:23:49.711 --> 00:23:53.547
Let's rally the troops.

00:23:53.547 --> 00:23:54.310
How are we going to figure this out?

00:23:54.310 --> 00:23:54.913
Right, let's connect the dots.

00:23:54.913 --> 00:23:59.875
Later on We'll figure it out, but I don't know what I got ourselves into, but we're going to do it.

00:23:59.875 --> 00:24:09.213
But any outlandish requests, we can figure it out for sure and have a good time doing it.

00:24:10.705 --> 00:24:11.627
It's all a learning process.

00:24:11.627 --> 00:24:35.809
When you do those things, any things you wish you learned earlier in your career Learned, I wish I would have, kind of when I finally, after 12 years of ocean, then I decided to kind of, I want to make this, I want to move up and on and learn, and I kind of wish I would have done that a little bit earlier.

00:24:35.809 --> 00:24:37.313
And nothing against them.

00:24:37.313 --> 00:24:38.234
I loved ocean.

00:24:38.234 --> 00:24:43.085
The owners are great, still still great to me, um, over at ocean and.

00:24:43.085 --> 00:24:54.127
But I wish I would have started that process of gaining more knowledge from different experiences a little bit earlier and gaining more knowledge from different experiences a little bit earlier.

00:24:54.127 --> 00:24:55.269
And then I really didn't start.

00:24:55.269 --> 00:25:09.301
I joined CMAA 2013, 14, right when I started as an assistant club manager, right when I got promoted over at Beauchesne, but I really didn't get engaged with it until 2018, 19.

00:25:09.301 --> 00:25:16.644
So I really wish I would have started on the BMI track and then my track to my CCM a little bit sooner.

00:25:16.644 --> 00:25:17.809
It's never too late.

00:25:19.467 --> 00:25:34.773
I'm having a good time doing it now it's fun realizing when I first started going to those Pelican Chapter meetings when I was 23-24 years old and I was by far the youngest person in the room by leaps and bounds.

00:25:34.773 --> 00:25:36.952
It made me maybe a little uncomfortable back then.

00:25:36.952 --> 00:25:49.421
But seeing the transition of our chapter alone leave aside national, just our chapter alone is probably quadrupled in size.

00:25:49.421 --> 00:25:53.240
It seems like, at least when you go to the meetings, I don't know by numbers probably quadrupled in size.

00:25:53.240 --> 00:25:54.325
It seems like at least when we go to the meetings.

00:25:54.325 --> 00:26:08.799
I don't know by numbers, but in the past 10 years it seems like our average age is definitely getting younger and younger and we have we have peers in every age and kind of leadership role capacity.

00:26:08.799 --> 00:26:13.804
You know we have everything represented now in our chapter alone role capacity, we have everything represented now in our chapter alone.

00:26:13.924 --> 00:26:23.334
It's been fun seeing that just in the past five, six years that I've actually engaged myself a little bit more, Got myself entwined with the board of our chapter.

00:26:23.334 --> 00:26:31.124
Now finally, and kind of taking that next leap, Drinking the juice hard, yeah, Bought in hard.

00:26:31.124 --> 00:26:33.854
You got to start somewhere.

00:26:33.854 --> 00:26:35.329
I'm enjoying it.

00:26:35.329 --> 00:26:41.255
I'm almost ready to start doing my overview courses for CCM.

00:26:41.255 --> 00:26:43.298
Oh, snap, yeah right.

00:26:44.826 --> 00:26:45.589
Almost getting there.

00:26:45.589 --> 00:26:48.691
So I try to go to a BMI a year.

00:26:48.691 --> 00:26:50.816
That's good, in conference too.

00:26:50.816 --> 00:26:53.890
Yeah, I wish I would have started on a little bit earlier.

00:26:53.890 --> 00:26:54.711
You know I did have.

00:26:54.711 --> 00:27:01.351
Originally, when I first started I had goals of getting my CCM before I was 30 and that would be cool, you know.

00:27:01.351 --> 00:27:05.616
But it didn't happen.

00:27:05.616 --> 00:27:08.079
And then the more I've moved, moved on.
